zucchini fries with tomato-mint salsa



'... so the poor guy almost started crying while he told me. I remember it lively, cause I was eating a hotdog.'

a silence fell upon the conversation.

'It was a reeaally good hotdog, dudes.'


 That's the guy I'm going to marry one day.
The guy that connects deep emotional memories with a hotdog.
Soulmates, much?




 I made these zucchini fries the
 weekend we decided to take a little road trip.
We didn't have a lot of money.
We had even less plans.
We only had adventure on our mind.

Yellow pumps for the win!


 So I guess that's how last weekend will be told about one day:
'The weekend you made those crispy on the outside and tender in the middle zucchini fries and took silly pictures of them in the backyard while planning our little road trip'


Zucchini fries with tomato-mint salsa
snack for 2 - 3 hungry young people
adapted from: Jamiemagazine nr. 08 2012

Zucchini fries:
8 TS flour
400 g panko or plain dried breadcrumbs
1 T Italian seasoning (optional)
25 g parmesan cheese (optional)
3 eggs,
2 zucchini, cut into thick French-fry-size sticks, about 3 inches long.

Salsa:
2 tomatoes, finely chopped
juice of 1/2 lemon
1/2 chilipepper, chopped
1/2 onion, finely chopped
some mint leaves, chopped/ ripped in small pieces

Salt & pepper

Zucchini fries:

one: preheat oil in a large frying pan to 180 °C.
two: arrange 3 shallow, wide bowls or pie plates in a row.
three: in the first bowl combine the flour with a pinch of salt and pepper.
four:  mix together panko or bread crumbs, parmesan, Italian seasoning, and another pinch of salt and pepper in the second bowl.
five: in the last medium bowl, lightly beat the eggs.
six: now the fun part starts. Dip the zucchini sticks first in the flour until lightly coated, then in the eggs. Roll them in the bread-crumb mixture until well covered.
seven: fry the zucchini strips in batches until they are golden brown, about 3 minutes.
eight: transfer the fried zucchini to paper towels and drain.
nine: serve with salt and salsa {or ketchup}

Tomato- mint salsa:

one: combine the ingredients in a medium bowl, serve alongside the zucchini fries
.


Make sure you serve it with some coeur de pirate: comme des enfants

Hooray for zucchini fries! A perfect way to decimate the ever-burgeoning supply. Now to make the burgers to go with then...
